TIP – This recipe doubles well. This recipe can also be made into 6 giant strata cups; just bake 25 minutes. Or if time is of the essence, layer this recipe in a buttered 10×15 lasagne pan, bake 40-45 minutes, rest 5 minutes then cut into squares.
TIP – Turn leftover turkey dinner into Bubble & Squeak strata by layering mashed potatoes, chopped turkey, vegetables, gravy, cranberry sauce and stuffing topped with the omelette mixture. Get creative; leftover pizza can be turned into amazing lunch strata cups!
