TIP – Fresh lemon grass imparts a bright mix of citrus, floral, and minty notes while dried lemon grass contributes a less complex, woodsy flavour. Dried is a very acceptable substitute. One trimmed, minced fresh lemon grass stalk = 1 teaspoon lemon grass powder = 1 1/3 tablespoon dried lemon grass = 1 tablespoon lemon grass paste (16g).
TIP – If a butcher shop is accessible, the greatest value for a tender beef cut is the sirloin cap aka coulotte steak. Sear whole steaks, make into strips for stirfry or cut into large cubes for kebabs. This tender, tasty cut has good marbling and doesn’t require marinating.
