Tostada is a Mexican staple food similar to pizza and elote is grilled street corn. You don’t have to be Mexican to commemorate Cinco de Mayo; you just need to partake in this authentic meal. Nothing here is difficult to make from scratch, but there are quite a few steps with a lot of spices. There’s always the grocery store with canned refried beans, a jar of salsa and pre-made chorizo sausage for backup. Although nothing compares with the cornmeal crust, tostada shells work.
